HONEY HORSEY GLAZED SALMON

Honey Horsey Glazed Salmon  




3 tbsp Honey
1 tbsp Maple Syrup
1 tbsp Horseradish sauce
1 teas. Garlic powder
1 teas. Basil



I like to saute some fresh mushrooms up to cover the salmon with too. Whip all seasonings and sauces together. Lay Wild Caught Salmon out in a shallow pan. (I spray the bottom and sides of the pan slightly).
Poke some holes in the salmon with a fork. Pour glaze mixture over the Salmon and salt and pepper. Add the mushrooms. Bake at 350* for 20 plus minutes. Enjoy! C'mon! Can it get any easier than that?

TOFU VEGGIE SCRAMBLE

Hmmm....Tofu? Well I wanted to try a few recipes with it because I am leaning towards a more Pescatarian/Plant strong lifestyle -more veggies, fruits, beans, nuts and legumes, whole wheat products with minimal amounts of meat. (Pescatarian is basically a vegetarian who includes seafood.) 

This was yummy! With clementines on the side.  :)


And guess what? This was very good! Tofu tends to take on the flavor with which its cooked, i.e. garlic, soy sauce, bbq etc. and to be honest, in this recipe it tasted just like scrambled eggs. 

1 Pkg. Very Firm Tofu (I use organic) 
1 cup baby spinach
1/2 Green bell pepper
1/2 Red pepper
1 yellow onion
1 Teas. onion powder
1/2 Teas cumin (if you like spicy)
2 Tlbs. minced garlic (I use the jarred kind)
chopped green onion
Salt and Pepper
and any spices you want to add

Extract every bit of water from the Tofu that you possibly can -via paper towels wrapped around it and squeezing and pressing all the water out. Chop the tofu up into bite size pieces. Use Olive oil in your pan.Then just throw everything together in the skillet. Toss and cook until the veggies are done to your liking. :)
